Pour the two types of flour into a bowl, incorporating the egg, the sugar, a pinch of salt and the grated lemon peel. Finally add the butter into small pieces and work quickly until you will get a smooth and homogeneous dough. Wrap it in some food film and put in the fridge for at least half an hour before using it.
Meanwhile, turn the oven on, in static mode, at about 170° C. Meanwhile chop the dried fruit on a cutting board, put it in a saucepan with honey and a piece of butter.
Melt everything, stirring constantly until it is caramelized. Let it cool.
Roll out the pastry with a rolling pin and cover the rectangular tart mold, previously greased and floured. Press the edges down with a fork and hole the bottom.
Spread the mixture of honey and dried fruit evenly over the pastry. Lower the edges of the pie by crushing them with the fork. Bake for about 25 minutes.
Once cool, decorate with moisture resistant icing sugar and sugar stars.
