A fresh and tasty cake, quick and simple to prepare, with fruit and fresh cream. It will get everyone for its delicacy.
Prepare the panna cotta. Bring the fresh cream and sugar to the boil; remove from heat and add the pre-hydrated gelatine and flavoring. Pour the mixture in a mold ø 20 x h 10 cm, lined with cling film and put it in the freezer for an hour. Meanwhile prepare the mousse; blend the red berries to a puree and heat with the sugar (about 70° C). Add the lemon juice and the pre-hydrated gelatine. Mix well and leave to cool at room temperature. Then lightly whip the fresh cream and fold in the mixture. Pour the mousse over the panna cotta and leave it to chill for a day in the freezer. Take out the dessert by turning the mold upside down and removing the cling film. Decorate with Fondant Sugar, melted Chocolate and raspberries.
