The gingerbread cake is a famous Anglo-Saxon spiced cake, typical of the Christmas period, so good that it will look like just out of a pastry shop, but so simple to prepare.
With the electric mixer, whisk the eggs with the granulated sugar and the brown sugar until you get a light and fluffy mixture. In another bowl, sift the flour with baking powder and add it all the powdered ingredients. Melt the butter and let it cool. Add the flour to the egg and sugar mixture then pour the melted butter and the whole milk. Stir gently to mix all the ingredients. Pour the mixture into the buttered mold and bake in a preheated static oven for about 20 minutes. Prepare the filling working with the electric mixer the softened butter with the cream cheese and the powdered sugar until you get a smooth cream. Add few drops of lemon juice and cranberries. Let it cool.
Cut two layers and assemble the cake by spreading the cream between them.
If you like, you can decorate the surface of the cake with chocolate cream.
