Melt the butter over low heat and add the sifted flour a little at a time. Mix it well with a whisk to avoid lumps. Heat the nutmeg flavored milk and pour it into the compound. Let it cook for about 10 minutes on low heat. Chop the spinach and pour it in the bechamel sauce still hot, together with the toasted pine nuts and the raisins, previously soaked in warm water for about 10 minutes. Coat the pan with parchment paper, cover it with the first roll of flaky pastry and pour the mixture into it. Cover the mixture with the second roll of flaky pastry, previously pierced using the lattice crust grid. Bake for about 35-40 minutes at a temperature of 180° C.
