Step 1

  • In a bowl, sift the flour, add the cold butter cut into small pieces and work quickly with your hands until you get a floury and sandy mixture.
  • Add the cocoa, the icing sugar, a pinch of salt, the egg yolks and the whole egg and finally a few drops of vanilla extract. Work the dough with your hands until you get a soft and elastic dough.
  • Wrap the dough in plastic wrap and let it rest in the refrigerator for an hour. After the time has elapsed, roll out the shortcrust pastry with a rolling pin and use the heart-shaped pastry cutters to obtain 30 biscuits.
  • Take a smaller sized heart pastry cutter and cut a center hole for 10 cookies. Bake the cookies at 160 ° C for 15 minutes.

Step 2

  • In the meantime, whip up 50 g of royal ice following the instructions on the package. Transfer the royal icing to the pastry bag with croissant.
  • When the biscuits have cooled, take a whole biscuit as a base, with the royal icing glue the biscuit with the hole on top. Fill the biscuit cavity with the colored sprinkles. Take the third whole heart cookie and glue it to the surface.
  • Roll out the white sugar paste with the help of a rolling pin. With the pastry cutters get 10 hearts. Roll out the pink sugar paste and with the letter cutters get the writing. Glue each letter onto a sugar paste heart using a brush moistened with water.
