- In un’altra ciotola lavora con le fruste elettriche il burro fuso e lo zucchero per qualche minuto. Aggiungi le uova, precedentemente sbattute, una alla volta continuando a lavorare gli ingredienti con le fruste elettriche.
- Versa a filo l’olio, il latte, l’estratto di vaniglia e lo yogurt. Unisci poco per volta gli ingredienti secchi al composto liquido. Successivamente, lavora l’impasto con una frusta a mano per amalgamare gli ingredienti. Poi, aggiungi i lamponi, dopo averli infarinati, e una parte della granella di pistacchi. Versa l’impasto nei pirottini, riempendoli a ¾.
- Aggiungi in superficie lo zucchero di canna e la restante parte di granella di pistacchi. Cuoci in forno preriscaldato a 200°C per i primi 5 minuti, poi abbassa la temperatura a 170°C e prosegui la cottura per altri 25 minuti.
