Disponile in un una ciotola e bagnale con il succo di un limone. Lascia marinare per circa 15 minuti. Ungi con il burro la base ed i bordi della teglia per crostata e cospargi di zucchero semolato. Rivesti la superficie dello stampo con le pere e ricoprile con dei fiocchetti di burro ed un pizzico di sale. Inforna a 190° C per circa 30 minuti, finché lo zucchero non si sarà caramellizzato. Sforna le pere e cospargile con abbondante parmigiano e pepe. Ricopri con il rotolo di pasta sfoglia ed inforna nuovamente a 200° C per circa 15 minuti. Sforna il dessert e capovolgilo subito. Decora con della granella di nocciole. Servila tiepida, accompagnata da una crema di parmigiano. Prepara la crema versando il latte e la panna fresca in un pentolino e riscalda a fuoco lento. Mescola bene finché il composto non sarà perfettamente omogeneo. Aggiungi il parmigiano e continua a mescolare fino ad ottenere una crema liscia e senza grumi. Per essere sicuri di eliminare eventuali granuli utilizza il mixer ad immersione per ottenere una consistenza più cremosa.
