Step 1

Soften the gelatin in plenty of water for about 10 minutes. Meanwhile, pour the water, sugar, glucose and lemon into a saucepan. Place on medium heat and stir constantly, until it reaches 120 ° C. Turn off the heat and let it cool to room temperature. Add the chosen color and aroma. Then add the jelly taking care to eliminate excess water. Stir carefully and check that all the gelatin is completely dissolved. Once cooled, pour the contents of the saucepan into the polycarbonate chocolate molds: it is better to grease the cavities of the mold well with glycerin or alternatively with seed oil. Let it sit for at least 24 hours at room temperature. The jelly will thus have time to solidify and settle. Remove the gummy candies from the molds: separate the outline from the edge of the mold with the help of a stick and firmly pull the candies. Their consistency will make them resistant enough not to break. The jellies will now be ready to be enjoyed, to be served like this or sprinkled with granulated sugar.
