with red fruit sorbets

Step 1

With our preparations it is possible to prepare a good ice cream even without the ice cream maker. While preparing the base of the ice cream place a tray in the freezer, preferably of stainless steel. Bring the water and red fruits to a boil and let it cool. Cold mix the fruit base with sugar and add the liquid, mix well so as to avoid the formation of lumps. Pour the mixture into the tray you placed in the freezer previously, taking care not to fill it completely because the ice cream, once ready, will double in volume. Cover and place in the freezer. After about half an hour remove from the freezer. The mixture will have hardened slightly, especially at the edges, mixes vigorously trying to break any ice crystals that have formed. If you prefer you can also blend the mixture at low speed. Put it back in the freezer and repeat the operation after about an hour and a half. Place in the freezer again for about 3 more hours. At this point the sorbet is ready!

Step 2

Whisk the butter with the sugar in the whisk, add the sifted egg white, flour and cocoa. Stir well to mix the mixture. Place in the fridge to cool for about 1 hour. Place the silicone mat in the oven pan and pour some dough on the pan, spreading it with the back of a spoon to form small circles of about 8 cm. Bake at 170 ° for about 5/6 minutes. Remove from the oven and place the still hot dough discs inside the half-sphere mold so that they take a "basket" shape. Let it cool down. Fill the waffles with the sorbet and complete the decoraing with icing sugar and red fruits.
