with peaches and orange glaze

Step 1

Pour the white chocolate disks into a bowl. In a saucepan, heat the cream until it touches the boil.

Step 2

Pour the hot cream into the bowl with the chocolate and let it soften for a few moments. With a spatula we mix everything. If necessary, put in the microwave for a few seconds until the chocolate has completely melted. Add the spoonful of orange paste mix and mix well. Cover the surface with plastic wrap and allow to cool to room temperature.

Step 3

Peel the peaches, remove the core and cut them into cubes of about 5-10 mm. Dab with absorbent paper (this will prevent the pieces of fruit from settling on the bottom of the mold during cooking).

Step 4

Pour the peach cubes into a bowl, add the cinnamon and ground ginger. Put it aside.

Step 5

In a bowl add the sifted dry ingredients.

Step 6

Add liquid ones. Blend quickly and add half of the diced peaches.

Step 7

Grease the mold and pour half of the dough into it.

Step 8

With a spoon gently lay the remaining peaches and cover everything with the remaining mixture. Bake at 170 ° C for 45-60 minutes in a static oven. We always recommend doing the toothpick test to verify correct internal cooking.

Step 9

Remove from the oven and let it cool completely.

Step 10

Once cold, turn the mold upside down to extract the cake. Pour on the top, abundant orange glaze: if necessary, heat it for a few moments in the microwave to make it reach a more fluid consistency.

Step 11

Decora with meringues, mint leaves and flowers.
