Yogurt cheese with breadsticks and seaweed crackers

Step 1

Salt the yogurt and transfer it over a cheesecloth; close everything with kitchen string. Hang the "bag" obtained in the refrigerator and place it under a bowl to collect the whey. Leave to rest in the fridge for 48 hours. Now make small balls. Put it back in the fridge to dry for about 1 day. Add the spices and place the balls in the jar. Add the oil, close the jar and let it rest in the fridge for 2 days before consuming it.

Step 2

For the seaweed crackers: with the help of the mixer, mix the flour, the cold butter cut into cubes, the seaweed flakes and half a teaspoon of salt. Gradually add 6 tablespoons of water, stirring constantly, until the dough forms a ball. Knead quickly and roll it out in a very thin sheet. Sprinkle with the rest of the fior di sale and cut out the dough to form squares. Arrange the squares on a baking tray lined with parchment paper and cook at 180 ° C for about 10/15 minutes.
