Work all the dry ingredients by hand or with a mixer: flour, sugar, grated zest, cocoa and spices. Dissolve the baking soda in a glass of warm water and add it to the mixture. Knead carefully and add as much water as needed to give the dough consistency. Roll out the dough into a sheet about 1 cm thick. With the Mostacciolo pasta cutters, make rhombuses of the desired size. Cover a baking sheet with parchment paper and cook at 180 ° C for about 8 minutes. Once cold, wet the mostaccioli in melted dark chocolate in a bain-marie or in the microwave, using the kitchen tongs. Leave the mostaccioli to dry on a sheet of parchment paper.
