Step 1

Correct tempering is the secret to obtaining shiny, streak-free, inviting-looking and easy-to-mold chocolate. In a water bath: melt the chocolate at a temperature between 40 ° and 45 ° C. Pour 2/3 of the melted chocolate on the cold surface, preferably marble, and, with the help of spatulas, work it quickly so as to bring it to a temperature of about 28 ° C. Pour the processed chocolate into the remaining melted chocolate and mix until a homogeneous mass is obtained and reach a temperature of 32 ° C for dark chocolate, 30 ° C for milk chocolate and 29 ° C for white chocolate. In the microwave: mix the chopped chocolate at medium power for about 1 minute. Take it out of the microwave and mix it. Repeat this operation minute by minute until the chocolate melts completely. Check that the chocolate has arrived at the right temperature, that is 32 ° C for dark chocolate, 30 ° C for milk chocolate and 29 ° C for white chocolate. Fill the professional polycarbonate mold with tempered chocolate and make sure that it adheres to the whole surface of the shape.

Step 2

Turn the mold upside down and drain the excess chocolate. Unused chocolate can be re-tempered and re-used.

Step 3

Put the mold in the fridge for a maximum of 10 min. Put the mold upside down and release the half egg of chocolate giving a dry and decisive blow on a rigid surface.

Step 4

Place the desired surprise inside one of the two halves of the egg and cover the edges with melted chocolate using a piping bag.

Step 5

Close with the other half egg and wait for the melted chocolate to dry thus soldering your Easter egg. Do this by wearing gloves to avoid staining the chocolate.

Step 6

Step 7
