They can be prepared in advance and can be kept for a long time

Step 1

To prepare the meringue nests, whip the egg whites at medium speed and as soon as the mixture begins to foam, gradually add the sugar. Gently blend the royal icing by mixing with the spatula. Line the pan with parchment paper, pour the mixture into the pastry bag. With the star-shaped croissant (e.g. 1M) and with a circular motion it forms the meringue nests. Cook slowly in a hot oven at 80 ° C for about 3 hours

Step 2

Prepare the Lemon Curd. Whip the eggs with lemon juice and sugar. Add the vanilla bean seeds and the starch. Cook the mixture in a bain-marie, stirring constantly with the spatula until a very thick cream is obtained. Leave to cool and keep in the fridge. You can also add to taste, after cooking the mixture in a water bath, 55 g of butter and 4 g of lemon peel, in this way you will get a cream with a stronger taste. To give a touch of originality to your gift, pack the meringue nests in transparent bags and close with a ribbon.
