Fai riposare l’impasto ottenuto in frigo per circa mezz’ora coperto con della pellicola. Taglia la zucca a tocchetti e infornala a 180° per circa 30 minuti. Togli dal forno ed avvolgi la zucca cotta in una pellicola e tienila da parte. Stendi la pasta frolla e rivesti lo stampo per crostata, precedentemente imburrato ed infarinato, e spennella la superficie ed i bordi con il tuorlo sbattuto. Riempi l’incavo dello stampo con dei legumi secchi (ceci, fagioli, lenticchie) per evitare che l’impasto si gonfi durante la cottura; inforna a 170° per circa 15 minuti. Sforna la crostata, elimina i legumi secchi e riponi in forno per altri 5 minuti. Togli dal forno e lascia raffreddare. Prepara il ripieno mescolando il resto degli ingredienti con la polpa della zucca cotta e tritata. Versa il composto nello stampo e con la Griglia Tagliapasta per crostate realizza la copertura di pasta frolla. Spennella la superficie con l’uovo ed inforna per altri 30 minuti a 180°.
