  • In una planetaria metti l’acqua e il latte tiepido con il lievito sbriciolato sciolto, il miele, aggiungi lo zucchero, gli aromi, la farina e impasta con la foglia. Unisci i tuorli e il sale, infine incorpora il burro morbido un po’ alla volta, lavora fino a ottenere un composto ben incordato.
  • Verso la fine aggiungi a mano le gocce di cioccolato, lascia riposare il composto in una ciotola coperta fino al raddoppio del volume. Riprendi l’impasto e dopo aver praticato le pieghe di rinforzo, arrotondalo sul piano di lavoro eseguendo la pirlatura.
  • Poni l’impasto nello stampo e fai lievitare coperto con pellicola per circa 3 ore, fino a quando raggiungerà quasi il bordo dello stampo.

  • Accendi il forno a 170/180° C. Con il bisturi fai un taglio a croce ed esegui la scarpatura, metti una noce di burro al centro e, con un po’ degli albumi avanzati sbattuti, spennella delicatamente il resto della superficie.
  • Infine, metti lo stampo su una teglia e inforna per 40/50 minuti circa.

  • Sforna a cottura ultimata e infilza subito alla base dello stampo lo spillone, posiziona il panettone capovolto all’interno di una pentola alta capiente.
  • Poi, lascia raffreddare prima della decorazione.

  • Prepara la ganache di copertura: metti la panna e il miele in un pentolino e porta a ebollizione. Versa il liquido caldo in una ciotola con dentro il cioccolato e il burro a pezzetti, amalgama bene fino a sciogliere completamente il cioccolato rendendo il composto lucido e vellutato.
  • Successivamente, lascia raffreddare la ganache a temperatura ambiente per una notte intera finché raggiungerà una consistenza burrosa. Se dovesse occorrere un breve passaggio in frigo per ridurre i tempi, non lasciare la ganache più di 10 – 15 minuti, altrimenti tenderà a opacizzarsi e indurire troppo. Ricopri con una spatola la cupola del panettone con uno strato leggero di ganache.

  • Trasferisci il resto della ganache nel sac à poche munito di cornetto a stella. Decora con piccoli motivi a rosellina, premendo al centro e con un movimento rotatorio circolatorio, realizzare tante roselline uno di fianco all’altra fino a coprire tutta la cupola del panettone.
