Step 1

  • Prepare the base of the cake: in a bowl put the eggs with the sugar, then whip with the electric mixer (or planetary mixer) until the mixture is white and fluffy.

Step 2

  • Add the oil slowly and the cold melted chocolate, the aroma.
  • Subsequently, gently combine the sifted powders by hand: flour, unsweetened cocoa powder, baking powder and bicarbonate alternating with buttermilk.

Step 3

  • Pour the mixture into the mold, greased with the release agent and the base lined with baking paper.
  • Bake in a preheated oven at 180 ° C for about 45/50 minutes, or until doing the toothpick test will not come out clean.
  • Remove the base of the cake and place on a wire rack to cool. Remove the base from the mold, cut the top cap and place it upside down on the riser.

Step 4

  • Make the chocolate glaze: pour the liquid cream into a saucepan and bring it to a boil.
  • In addition, combine the dark chocolate discs, turn off and continue stirring until completely melted.
  • At the end you will get a shiny cream to be allowed to cool. Also, spread the icing on the surface of the cake with an angle spatula, let it set.

Step 5

  • In the meantime, prepare the cheese frosting: in a bowl, mix the cream cheese and the icing sugar with a whisk (leaving aside a spoon that will be used to whip the cream) add the fuchsia coloring gel.
  • Separately, whip the cream with a spoonful of powdered sugar and add it little by little to the cream cheese and powdered sugar mixture, gently so as not to dismantle everything.
  • Then, if you like, intensify the color by adding more dye.
  • Finally, pour the frosting into a pastry bag equipped with a star nozzle, leaving aside just enough to spread a light layer over the whole cake.

Step 6

  • After covering the cake, form small roses with the sac à poche, pressing the center and making them side by side with a circulatory movement, until they cover the entire surface. Finally, finish the sides with small wisps.

Step 7

  • Finally, Decora with pink sugar pearls and transfer to refrigerator to compact before serving.
