Step 1

Quickly work the butter softened with sugar and egg. Sift the flour and add it to the mixture, mixing well. Leave the dough to rest in the fridge for about an hour covered with plastic wrap. Roll out the dough with a rolling pin and line the tart mold, previously greased and floured. Use the puff roller to puncture the dough. Bake at 180 ° C for 10 minutes. Remove from the oven and leave to cool. Prepare the custard by mixing 100 ml of milk with the starch and yolks in a bowl. Place the rest of the milk in a saucepan, add the sugar, aroma and concentrated paste and bring to a boil. Now add the starch mixture and yolks and mix everything continuously. Bring to a boil again. Leave to cool in the fridge for at least 30 minutes, covering the cream with the contact film. Once cold, pour it into the mold and decora to taste with fresh fruit.
