Separate the yolks from the whites. Sift together the flour, baking soda, baking powder and sugar. Make a hole in the center and pour in the oil, egg whites, lemon juice, lemon zest. Mix all the ingredients and mix well, then add the egg whites previously beaten until stiff. Mix well until a frothy and homogeneous mixture is obtained. Pour it into a previously buttered mold, then bake for about 50 minutes at 165 ° C. Remove from the oven and leave to cool. Cut the cake in half and fill it with a layer of pistachio cream spread and a layer of whipped cream and decorathe with blackberries and currants at will.
