Step 1

Work the flour, baking powder and butter on a work surface. Add the sugar, egg, concentrated paste and lemon zest. Knead carefully until it forms a stick. Wrap it in plastic wrap and let it cool in the fridge for about 1 hour. Roll out the dough with a rolling pin until it reaches a thickness of about 0.6 mm. You can help yourself with our guides to get the right thickness. Cover the mixture with the base and sides of the hinged mold, previously covered with parchment paper. Place some silver paper over the dough so that it adheres perfectly to the edges. Bake for about 10 minutes at 180 ° C. Remove the silver paper now
and bake again at the same temperature for another 5 minutes. Prepare the filling by mixing all the ingredients. Pour into the mold and bake at 160 ° C for about 1 hour. Remove from the oven and let it cool. Prepare the syrup: pour the water, the cut peel of the citrus fruits and the sugar into a saucepan and bring to the boil for about 10 minutes. Let it cool down. Decora the dessert with fresh cream, syrup and citrus julienne.
