Gourmet shortcrust pastry baskets filled with custard. 

Step 1

  • In a bowl, combine the flour and sugar. Then, cut the butter into small pieces and add it to the flour. Start kneading with your hands until you get a sandy mixture.
  • Add the egg, the yolk, a few drops of natural vanilla extract and a pinch of salt. Knead the ingredients by hand until obtain a soft and smooth dough.
  • Subsequently, wrap it in cling film and let it cool in the fridge for about an hour. Meanwhile, make the custard. He heats the milk in a saucepan with half a teaspoon of vanilla extract. In a bowl, beat the egg yolks together with the sugar with a hand whisk. Combine the sifted flour and mix thoroughly. Pour in the hot milk a little at a time. Return the cream to the heat while continuing to stir, trying to never exceed a temperature of 82 ° C.
  • When the cream has thickened, remove it from the heat and let it cool. Take back the dough and roll out the pastry with a rolling pin on a lightly floured surface. Butter and flour the tartlet molds. Line the molds with the pastry. Prick it with the tines of a fork to prevent it from swelling during cooking. Put the tartlets in the refrigerator another 30 minutes. Cut out parchment paper discs of the inner diameter of the tartlets.
  • Place them on the shortcrust pastry and fill with dried beans. Bake in a preheated static oven at 175 ° C for 12 - 15 minutes. Let them cool.

Step 2

Resume the custard and pour it into a pastry bag with a smooth spout. Fill the tartlets with the cream.
