with berries

Step 1

With a mixer crumble the biscuits. Melt the butter in a bain-marie and pour it over the crumbled biscuits. Add a spoonful of honey. Cover the edges and base of the steel mold with parchment paper.

Step 2

Pour the biscuit mixture into the bottom of the mold and level the base. Place the biscuit base in the refrigerator for at least 30 minutes to solidify. Soak the gelatin in cold water for about 10 minutes.

Step 3

In a bowl, work with the electric whisk yogurt, cream cheese, icing sugar and blueberry flavoring. In another bowl whip the fresh cream, it should not be too firm. Squeeze the gelatine sheets and melt them in a saucepan over low heat. Add the jelly once it has cooled down a little with the yogurt mixture. With a spatula add the whipped cream gently. Pour the cream obtained on the biscuit base and leave the cake to cool in the refrigerator for at least 5 hours. Heat 2 tablespoons of jam in a saucepan to melt it.

Step 4

Pour the jam onto the surface of the cheese cake. Garnish with the berries.

Step 5

Finish with decorations in sugar.
